Decarbonizing Hotel Food Systems explores how hotels can become more sustainable and resilient by reducing their food-related emissions, which are estimated at 185 million tonnes of CO2-eq globally.

This 2024 report maps out the current hotel food system and its impact. It also outlines key actions for the industry to develop more sustainable practices, setting out a pathway to reduce aggregate GHG emissions from hotel food systems by 30% by 2030. Case studies are utilised to illustrate the innovative solutions already being piloted by certain businesses – including analysing food waste using Winnow’s AI technology. While some recommendations require upfront investments, the financial returns of reducing food waste can be significant.
